Spanish food - Sangriya, Gazpacho, Prawns
SANGRIA (4 PORTIONS)
Ingredients 08 Ice cubes 1 bottle Red Wine, chilled 2 strips Orange-Peel 2 strips Lemon Peel Juice of 4 oranges Juice of 2 lemons 2 tbsps Sugar 4 tbsps Cointreau 500ml Soda Water, chilled 2 cups Mint Sprigs Orange and Lemon Slices
Preparation - Put ice cubes in a large bowl. - Pour in the wine and add strips of orange and lemon peel. Put orange juice in a small bowl. - Add sugar and stir until the sugar dissolves. - Stir in the wine, lemon juice and Cointreau. - Top up with soda water. - Pour into a large, cold serving jug. - Decorate with mint sprigs, orange and lemon slices.
GASPACHO (4 PORTIONS)
Ingredients 750 grms Tomatoes 1 no Onion Chopped 1 no Cucumber Seeded and Sliced 1 no Chopped Red Pepper (preferably skin off) 2 cloves Chopped Garlic 2 slices White Bread broken into pieces 300 ml Tomato Juice 3 tbsps Olive Oil 2 tbsps Sherry Vinegar Salt Freshly Ground Pepper
Accompaniments 1 no Hard Boiled Egg finely chopped 4 tbsps Chopped Spring Onions 4 tbsps Chopped Onion 4 tbsps Fried CroOtons
Preparation - Soak the bread in cold water for 30 seconds. Then squeeze out the excess moisture. - Peel, seed and chop tomatoes. - Hold the peppers on to an open flame and turn on all sides. Immediately wrap in plastic film and keep a side for 5-10 mts to sweat. - Take off the plastic film, hold under a running cold water and peel the skin. - Mix all ingredients in a bowl & leave for about 1 hour. - Put into a food processor or blender and mix until smooth. - Pour soup through a sieve, pressing down well on the contents of the sieve. - If necessary, water down the soup with cold water. - Adjust seasoning of soup if necessary. Then pour into bowls. - Place accompaniments in separate bowls and pass them around on a tray for everyone to help themselves.
SIZZLING PRAWNS (4 PORTIONS)
Ingredients 50ml Olive Oil 4 cloves Crushed Garlic 1 no Fresh Red Chilli, Seeded and Chopped 350 grms Peeled and De-veined Prawns Salt to taste 2 tbsps Sherry 2 tbsps Chopped Parsley Lemon Wedges Bread to serve
Preparation - Heat oil in a frying pan over high heat. - Add garlic and chilli. Cook for 1 minute. - Add prawns and salt to taste. Cook 2-3 minutes. - Add sherry and parsley. - Mix well and serve. - Accompany with lemon wedges and bread to soak up the juices.
